With the automatic unstructured algorithm (Delaunay), you can't: you can
only generate tetrahedra.

With the structured algorithms (transfinite/extrusion), you can generate
tetrahedra, hexahedra, prisms (and pyramids), depending on what surface
mesh you recombine (try e.g. tutorial/t6.geo with or without the
"Recombine Surface" command).

NB: Could you give me a pointer to the relevant section in the reference
manual? I'll try to clarify things.
