Omaïma,
Take a look at this tutorial. It is similar to your case.

Subject: [Gmsh] Meshing of a Circle

Hello,

We are civil engineering students working on granular grains fragmentation.
We are trying to mesh a circle (find attached circle.geo), but even with a refined meshing, the mesh is always polygonal (find attached circle.msh).
Could you please guide us towards a more refined meshing?
Is there a way to obtain a more circular meshing?

Thank you in advance,

Best regards,
